Butternut Squash “Hummus”

Game Day is just around the corner! So, here is a healthier version of everyone’s favorite dip to serve for the big game! This dip is made with butternut squash, so you get carbohydrates that your body can process and use efficiently for energy without all the gastro-intestinal issues that come with consuming chick peas.

4 cups butternut squash (cubed)
1/3 cup tahini
½ cup lemon juice
3 tbsp olive oil
3 garlic cloves, finely chopped
¼ tsp onion powder
¼ tsp paprika
½ tsp black pepper
½ tsp cumin
½ tsp Crushed red pepper flakes (optional if you want spicy)

1. Bring 2 cups of water to boil in a large pot. Steam the butternut squash for approximately 20 minutes, until soft.
2. While the squash steams, add 1 tbsp olive oil to a small skillet and sauté the garlic.
3. Using either a food processor or hand mixer, combine the steamed squash and other ingredients until creamy.
4. Serve with fresh veggies or our tortilla taco tarts!
