This is one of my first steps into healthy “southern” food. Honey Biscuits and Sawmill Gravy! It is a breakfast that will transform Sunday mornings. I say that because I feel that Sunday is the day for special breakfast.
My mother’s side of the family is from North Carolina, so my heart was made to be southern. In the South, biscuits and gravy is a staple of breakfast. It’s hearty and flavorful. Drop biscuits stick to your ribs, not to mention your arteries. When I manage to get back to West Virginia there is a place I love to go that cooks only southern food. It is one of my comfort places. So when I’m there, I dig into those southern family roots and splurge a little.
When my brother, his girlfriend, and I started talking about taking my passion for healthy cooking online, I knew I wanted to show the world how southern food can actually be good for you. It doesn’t have to stick to the inside of your arteries to be delicious! These biscuits are one of the recipes I knew I wanted to try. I also knew, it would quickly become one of my brother’s favorites.
The biscuits are made with a combination of coconut flour and almond flour. Both high in fiber and protein. I also decided to use ghee in this recipe, to help add a creamy, nutty flavor. What is ghee you ask? It is a form of clarified butter. That probably made a few of you think “Woah, that’s dairy!” But hear me out first… Ghee is popular around the world, particularly Indian cuisine. Hence the name ghee, which is Hindi for fat. It has negligible amounts of lactose and casein, which are the two bad things about dairy products. Those two things, lactose and casein, are why people have dairy intolerances and cause massive issues in the body. The fat that is provided by ghee is the good kind for your body that helps balance lipid levels, i.e. your cholesterol. I also bet you didn’t know that you need the right kinds of fats for your brain, for memory, and learning. Well, that’s ghee. Ghee provides you all those wonderful things without the bad of traditional parts of dairy products! As always, make sure you buy organic, grass-fed ghee.
1 cup almond flour
¼ cup coconut flour
1 tsp baking powder
¼ tsp salt
1/3 cup coconut milk
2 tbsp ghee
1 tbsp honey
6 egg whites
- Preheat oven to 400 degrees. Line baking sheet with parchment paper.
- Mix all the dry ingredients in a bowl. Add wet ingredients and mix until all combined.
- Drop about a tablespoon worth of batter onto the baking sheet.
- Bake about 15 minutes, until tops are golden brown.
1 lb ground sausage
1 tsp ghee
1 tbsp almond flour
3 tbsp arrowroot powder
½ tbsp pepper
2 cups coconut milk
Salt to taste
Heat a skillet on medium high heat. Add ghee to skillet and allow to melt.
- Add sausage and cook until done. DO NOT DRAIN!
- Place sausage aside and leave the grease in the skillet.
- Add coconut milk and flours to skillet. Stir until well combined. Allow to start to boil. (Note: This will help the arrowroot thicken into a sauce.)
- Allow to boil for about 5 minutes, stirring continuously.
- Add pepper and salt. Stir for another 2 minutes.
- Add the sausage back in. Mix it up and simmer for about 2 more minutes.
