Who doesn’t love waffles! I love to have special breakfasts on the weekends. During the week, it’s rush rush. So I don’t always have time to make more then a few simple eggs or have a bowl of my home-made granola cereal.

Waffle Mix
3 eggs
1/2 cup coconut milk
3 tbsp maple syrup
1/2 tbsp vanilla extract
1/4 cup almond flour
2 tbsp coconut flour
2 tbsp coconut oil
1/2 tsp baking powder

1. Preheat waffle maker.
2. Combine ingredients in a bowl and whisk into a batter.
3. Pour enough batter on the waffle maker to fill. Close and cook for recommended time. I usually check mine after 5 minutes.
4. Serve with maple syrup. Top with sliced bananas, strawberries, blueberries, or another fresh fruit. You can also top with pecans.
