Bananas are packed with several vitamins like, potassium, vitamin c, and magnesium – to name a few. Potassium is essential for the muscles of the body. This includes the heart. Most people have probably heard the common cure for muscle cramps is bananas. Well, that is thanks to the potassium! Potassium is essential for muscle contraction and relaxation.
Due to the combination of this mineral along with fiber, vitamin C and B6, bananas are heart healthy. They also contain tryptophan, which a mood boosting amino acid. I enjoy banana chocolate chip muffins for breakfast to start my day.
Banana Chocolate Chip Muffins
3 ripe bananas
1 tsp baking powder
1 cup almond flour
1/3 cup coconut milk
3 tbsp. honey
1/4 cup chocolate chips, plus about 2 tbsp extra (I use Enjoy Life Brand, otherwise make sure 85% cacao)
1. Preheat oven to 350 degrees.
2. Using a hand mixer, combine all the ingredients except chocolate chips in a medium sized bowl. Once well blended, use a spoon to stir in the chips.
3. Line a muffin tin with paper cups. Fill each cup about 3/4 full.
4. Bake in oven for 15-18 minutes.
