Beef Burrito Bowl

burrito bowl, grain free, cauliflower rice, paleoI used to love going to places like Chipotle and getting the burrito bowl. Despite how awesome Chipotle is with all their policies on food and their devotion to health, it doesn’t mean that some of the ingredients are made for us to consume. Namely, the rice and beans. When I do need to eat out though, getting their burrito bowl with lettuce is a wonderful alternative! It’s so nice to see a company devoted to the health of its customers.

So, here is a recipe for a burrito bowl that is simple that you can make at home. I made the shredded beef in the crockpot and the “rice” takes about 10 minutes. If you prefer chicken, the beef is easily swapped out. This recipe is great for during the week when you want a fulfilling dinner, but don’t want the hassle of making some elaborate meal.

Shredded Beef
Beef Round (or boneless, skinless chicken breasts)
1 cup chicken broth
2 tbsp black pepper
2 tbsp garlic powder
1 tsp oregano
1/2 tsp paprika
1/2 tbsp chili powder
1 tsp cumin
1/4 cup diced onion

1. Place the beef in the bottom of the crockpot. Add chicken broth.
2. Add spices on top of beef (or chicken). Top with onions.
3. Cook on low for 7 hours.
4. Remove meat from crockpot and use two forks to shred the meat.

Cilantro Cauliflower “Rice”
1 head of cauliflower
2 tbsp garlic powder
2 tbsp black pepper
1 tbsp coconut oil
1/4 cup chopped cilantro

1. “Rice” Cauliflower in food processor.
2. Heat skillet on medium high with coconut oil.
3. Add riced cauliflower and stir occasionally to keep from burning. Allow to cook for about 5 minutes.
4. Add spices and cilantro. Mix well.
5. Allow to cool another 5 minutes.
6. Top with shredded meat. Enjoy!
