It’s summer time!! Well, I live in Southern California so technically it’s like summer year round, but I won’t split hairs over it. I embrace every season, no matter the weather here. Anyways, the summer is here and that means popsicles! The hot weather begs for a delicious treat to cool down. These popsicles will do just that. There was some delay in me posting this because I was stuck on a name. However, the lovely Camilla came to the rescue with the name “Staycation”. It was perfect because the blend of coconut and strawberries is like being on a tropical island, yet you get to enjoy it at home.
1 cup frozen strawberries (or fresh)
½ cup coconut water
1 can full fat coconut milk
3 tbsp honey
3 tsp vanilla extract
1. Open full fat coconut milk and pour into blender. Add chopped banana. Blend on low. While blender is still on, pour in honey slowly. Add 2 tsp vanilla extract. Continue to blend another 30 to 45 seconds.
2. Pour coconut mixture into a pour friendly glass and set aside.
3. After rinsing blender, add strawberries and coconut water to the blender. Blend on low. While blender is still on, pour in 1 tsp vanilla extract.
4. Layer coconut puree and strawberry puree on top of each other in popsicle molds.
5. Freeze overnight.
*Note: I had a little left over purees when I was pouring into the molds. I blended them and it made for a great smoothie too. So that is always an option. *
