Quick Banana Pancakes

I woke up yesterday morning and decided that I wanted pancakes. This recipe is super quick to whip together. In just a few short moments I has a delicious short stack to start my day. This recipe makes about 4 small pancakes. These are of course gluten free and Paleo friendly.

1 banana
1 egg
2 tbsp coconut milk
1 1/2 tbsp coconut flour
1 tsp vanilla extract
1/2 tsp cinnamon

1. Combine ingredients in a blender.
2. Heat skillet on medium heat. Pour out desired batter amount on skillet.
3. Cook a few minutes on each side.
