I love salads! They are so refreshing! I must admit that I eat one almost every day. Not only can a salad pack a nutritional punch, it’s light for the summer heat. Here is a wonderfully refreshing salad, that just screams summer. I love the vibrant color of all of this particular salad. It makes it appealing to the eyes and the appetite.
Raspberry Vinaigrette Dressing:
1/4 cup fresh or frozen raspberries
2 tsp honey
1/4 cup walnut oil
1/2 cup white wine vinegar
1. Top spinach, or mixed greens of your choosing, with the fruits and walnuts.
2. Use a blender and pulse all the dressing ingredients until smooth.
3. Drizzle vinaigrette on top of salad and toss. *For a variation, add grilled chicken for some protein.*
