I love trail mixes, but when you buy them in the store they are usually packed with peanuts and the wrong kinds of oils. I try when I can to make my own for the work week to snack on at my desk. This week I was inspired to make a pecan and cranberry mix. It is sweet, but with a little after bite.
1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
2. Mix pecans, cranberries, and honey in a large bowl.
3. Add a little orange zest and black pepper at a time, stirring to make sure the pecans and cranberries get covered evenly by both.
4. Use a spatula to make a thin layer of the trail mix on the baking sheet.
5. Bake for 20 minutes.
