I bought some heirloom tomatoes at the store and couldn’t get enough of them. For a week I put them in everything! Breakfast, lunch, and dinner. This recipe is fantastic because it’s full of protein, flavor, and only takes a few minutes to make. I love simple meals like this.
3 Boneless, Skinless Chicken breasts, cubed
1-2 cups heirloom tomatoes
1 tbsp basil, dried
1 tsp black pepper
1 tsp garlic
2 tbsp olive oil or coconut oil
1. In a large skillet, heat oil on medium high. Cook chicken until almost done and white inside.
2. Slice lemon. Squeeze lemon over chicken. Toss in lemon slices.
3. Add spices. Add heirloom tomatoes.
4. Sauté everything for about 3-4 minutes.
