Chicken and Dumplings

Fall is the time of year when the weather changes and you look for warm, comfort foods to heat you from the inside out. Chicken and Dumplings was always one of those dishes for me. Luckily, or unluckily depending on the day when you ask me, it’s fall and 90 degrees here. So I don’t really need to be heated from the inside out. That said, I am typically always cold, especially in the Arctic Tundra known as my office. So a meal like this is hearty and warming in all settings. So for those who live in colder climates, this will do the trick of heating up the family. For those of us who like in a forever summer setting, it will help keep you in the fall spirit.

This is a crockpot recipe, but not quite a “set it, forget it” kind. So it would probably be great to make for a Sunday dinner when you are home, catching up on chores, reading a book, watching football, etc. I’m sure that the family will enjoy that special moment at dinner time when everyone gathers around the table and enjoys this fall favorite.

0012 large chicken breasts
2 tbsp parsley, dried
¼ cup onion, chopped
2 tsp lemon juice
½ cup carrots, chopped
32 oz chicken broth
12 oz coconut milk, full fat (BPA Free can)
3 tbsp arrowroot powder
½ cup mushrooms
½ tbsp black pepper
1 tbsp garlic powder
2 tsp basil

½ cup almond flour
½ tsp baking powder
3 tbsp coconut flour
3 tbsp coconut milk
3 egg whites
¼ tsp baking soda
½ tbsp. coconut oil

1. Pour chicken broth and coconut milk into crockpot set on low. Add arrowroot, lemon juice, and spices. Stir.
2. Place chicken into crockpot. Add veggies.
3. Cook on low for 4-5 hours.
4. Use a fork to break up the chicken.
5. Mix dumpling ingredients in a medium sized bowl. Once combined, form into golf ball sized dumplings.
6. Add dumplings to crockpot. Cover and continue to cook for another hour.
7. Serve.
