Mayonnaise

Here is a homemade mayonnaise that can be made in less than 5 minutes. This recipe is also Whole 30 approved. They key to this is an immersion blender.

paleo mayo1 egg
3 tbsp lime juice (or lemon)
3/4 cup light olive oil (or walnut oil)

1. In a tall container, add one egg and the lime juice.
2. Pour in oil. Allow egg to settle.
3. Place immersion blender in the container. Mix on low for about 2 minutes. Slowly start to move the blender around to make sure that you are incorporating all the oil. Do this for another 2-3 minutes.
4. Store in an airtight container in the refrigerator.
