Cauliflower Rice

009Here are two simple recipes for Cauliflower rice. I like to make the cilantro rice when I make the Beef Burrito Bowl and the other when I make my Chinese food take-out hacks, like the Orange Chicken or Sweet and Sour Chicken. This also pairs with fish very well. I love cauliflower for its versatility.

Recently, I picked up some pre-riced cauliflower at Trader Joe’s. This was an awesome find! (Thanks to Camilla for telling me about it)! They have it in the fresh section and frozen section. It helps saves a bit of time and kitchen clean up for when you are in a rush.

Cilantro Cauliflower Rice
1 head of cauliflower
2 tbsp garlic powder
2 tbsp black pepper
1 tbsp coconut oil
1/4 cup chopped cilantro

1. Heat a large skillet on medium heat with coconut oil.
2. In food processor, pulse pieces of cauliflower into rice.
3. Add riced cauliflower and stir occasionally to keep from burning. Allow to cook for about 5 minutes.
4. Add spices and cilantro. Mix well.
5. Allow to cook another 5 minutes.
6. Top with shredded meat. Enjoy!

cauliflower riceTake-Out Cauliflower Rice
1 head of cauliflower
2 tbsp black pepper
1 tbsp garlic powder
2 tsp onion powder
2 tbsp sesame oil

1. Heat a large skillet on medium heat with sesame oil.
2. In a food processor, pulse pieces of cauliflower into rice.
3. Add riced cauliflower. Top with spices. Stir to combine well.
4. Stir occasionally to keep from burning and cook for 10 minutes.
5. Serve with main dish.
